Power Smoothie

I was inspired to create this savory smoothie after listening to an NPR interview with a health professional who described her strategy for managing all those "servings" of vegetables and fruits the Federal Food and Drug people advise us to consume on a daily basis. Her plan was to load up early in the day with a smoothie, and supplement, if necessary, later on. Genius! A cool drink—so refreshing, easy to make and gulp down! Not finding many non-sugary options, I cobbled together my own power drink with super food beet juice as the base. It’s delicious—I promise. Have fun with it! Add your own favorite ingredients or whatever you have in the fridge.

Ingredients

11/2 cups greens such as kale, spinach, radicchio, romaine, torn into pieces

1/2 cup baby arugula

1/2 carrot, chopped

1 radish, quartered

1 small tomato, halved

pinch of cayenne, to taste

pinch of turmeric, to taste

grating of black pepper

1 cup organic beet juice

2 ice cubes

Directions

Add all the ingredients to a standard blender or Magic Bullet and zap for approximately 30 seconds. Enjoy!
