I grew up eating lentils my mom prepared in a simple stew that paired the healthy legume with onions and tomatoes—and loved the earthy dish. I don’t have her recipe, so I researched and found this one for red curry lentils with sweet potatoes.

Harleston’s storage tips: If greens of any kind begin to wilt at any point or at pick up, put them in a big bowl of ice water for 20-30 minutes. Almost all produce is washed and should go in the refrigerator. Remove tops from radish and save for juicing or sauteeing with the roots.  Oranges, brussel sprouts, carrots, radish root, cilantro, lettuce, and bok choi should all go in a plastic bag of sorts to retain moisture. Spinach can stay in the plastic bag that it comes in.
